You can cut most vegetables in a variety of ways, if you want to mimic the texture of rice or noodles, although you don't have to do that, you can just chop them up. SchrodingersCat Posted August 29, 2020 Share Posted August 29, 2020 Get a bunch of veg that roast well (carrots, mushrooms, broccoli, cauliflower, parsnip, turnip, beets, brussel sprouts, celeriac, red pepper, cherry tomatoes) dice them so they're about the same size, toss in oil and some seasoned salt and roast them. If you're looking for some sort of vegetable base for a meaty sauce, I'd highly recommend trying that. I also love sweet potato noodles.
