I'd recently heard some alarming things about egg allergies, i.e. if you eat eggs everyday, you can develop an egg allergy. I think it was JJ Virgin with her new diet book... And because I freaked out, I tried to only eat six eggs a week (2-3 on certain days), but that got depressing. I've had some egg sensitivity in the past (ok with it in other foods, but eating just an egg would cause hives and itching) but seem to be doing better on Whole30 - I'm eating a deviled egg every afternoon, and have some mixed in with my breakfast hashes as well. Around week 3 I'm going to try eating a scrambled egg or an omelet to see if I can handle that, but over all, I'd say whole30 has improved my egg tolerence. I eat after coming back from workout and have to hurry as I'm supposed to be working then. Eggs are the easiest for me. I also can't manage to make enough leftovers from dinner to eat them for breakfast as well. Callan, I heard the same thing on JJ Virgin's podcast. I almost freaked out because of the above. There are two if us though, and I did use a few while cooking some spinach frittata muffin cups. I bought 2 dozen more when I was at the store last night too! We love eggs! Eggs are one of the top common allergens. Too many of them cause me blemishes and cracked elbows. My husband and I consume 36 eggs a week. That's 18 per person. Although I think he eats more than I do. Plus two yolks every 10 days are used for mayo. I'm guessing that if you suspect them, they are probably giving you trouble. If you don't notice any new symptoms and you are using eggs from grain-free, soy-free pastured chickens, then you are probably fine. When I went paleo I had my bloodwork done at 3, 6 and 9 months. I adjusted my multi-vitamins at 6-months (gave them up because I was eating plenty of foods with iron, Vit-A), and now take Vit-D and Lysine. That's it.
