Renee Lee Posted January 10, 2013 Share Posted January 10, 2013 i saute onions/veggies first, toss in the meat, season and keep cooking. when it's a few minutes away from being done done (i.e. all the meat's cooked through), I lower the heat, toss in cubed or shredded sweet potatoes (1 potato per lb of meat is my ratio), mix it up and then cover for 10 minutes or so. Ann Posted January 10, 2013 Share Posted January 10, 2013 I made some last night! I peeled two sweet potatoes and cut into big chunks and fed them thru the food processor to shred them. Added salt, pepper, garlic powder and onion powder and mixed it up good. Put a couple tbsp ghee in cast iron skillet over medium high, added potatoes when it was hot, tossed it around a bit, then covered it with foil mixing it up a bit occasionally, until it looked good (some crispy bits, but not burned).
