Breakfast options

Found a brand of Chorizo, no MSG, no Sugar, but it does have some Nitrate. What's the ruling on having that during the month? It's not a big deal if I can't but I do love that spicy goodness with some eggs from time to time.

Second question, it's not really a pancake but I from time to time would make an egg whatever you'd like to call it. two eggs, 1/2C unsweetened shredded coconut, pinch salt, and some Cinn. Sometimes add some blueberries in it as well. Has kind of a hashbrown almost texture. I haven't made them in a while but sometimes they're good on the go. What's the thought on this.

I found this quote from a moderator in another thread: "Its actually fine. Nitrates are ok, sulfites are not." Looks like you can enjoy your chorizo!

As far as the egg thing, it seems fine to me---protein from the egg, fat from the coconut--all good. I would suggest adding a side of vegetables and it's a complete meal. Might even have to try it myself.

Renee, according on ISWF (p. 194) a serving of coconut flakes isn't 2 thumbs, but one to two open (heaping) handfuls. Am I reading this correctly? I thought that things like oils and butters were measured by thumbs, but things like olives and coconut flakes were masured by handfuls instead. I would appreciate some guidance. :) Thanks!
