Some dishes I have made recently:

543175_10151901321656515_1894548677_n.jpg

This was an attempt to use up my produce before I made another trip to the grocery store: Pork (seasoned with cumin, garlic salt, cayenne, and coriander), red peppers, green peppers, spinach, and leeks with a fried egg

Mashed sweet potato with cinnamon and coarse salt

Citrus Carnitas from "Well Fed". A lot of my friends said it looks like poop, but it was super tasty! I paired it with some red peppers and onions and a broccolini slaw dressed in a creamy avocado dressing

Berries with toasted almonds and coconut milk whipped cream from "Well Fed"...OH MY GOODNESS this was a delicious treat.

Homemade chicken (ahem) noodle soup, right down to the chicken stock, with everything except...the noodles haha. I surprisingly didn't miss them! And a side a mashed sweet potatoes with cinnamon and coarse salt

I'm really proud of this one. Chicken breast with roasted eggplant and homemade roasted red pepper sauce and fresh thyme...yummo!

Sorry to be a killjoy but I don't think the berries and coconut cream are in the true spirit of a W30. For me they would definitely be SWYPO. The rest look absolutely amazing though.

You know, I struggled with this one too. However, in the book, it states that all of the recipes are whole30 approved except for one, which is not this one. If it is incorporated into a meal, and not a snack or a dessert, I suppose it is okay. But, I am not the rule maker here!

I love adding zucchini noodles to my chicken soup. It gives it the slurp factor!

I love that you are enjoying your meals! It is NOT a journey about what you can't have, but a journey about celebrating what you CAN have!

Total apologies for my previous post. I guess it says more about me than the OP that I can't look at that without seeing dessert and imagining vanilla and maple syrup on them. :) Apologies if I offended anyone (struggling to remove foot from mouth)

Not at all, Kirsteen, Context is everything. For me, this would be SWYPO, whether I had it with dinner or later. Of course, I would be unable to eat it 'with' dinner. I would have to finish everything else first and then eat it like the dessert course anyway.

Kirsteen, I have decided SWYPO is such a personal thing that it becomes the art of W30. That fruit dish would lead me down a crooked path whether I ate it with a meal or not. In fact, my evil twin would save it for last and for me it would become dessert. On the other hand, I made sweet potato fritters last night to go with my steak and kale. They flattened out way more than I thought they would. I thought uh oh. SWYPO pancake shape. Then I realized it's not SWYPO for me. I don't like pancakes. Never have. I do love whipped cream though so I will not be whipping coconut cream and putting it on berries, coffee or anything else. :)

Thanks for all of the comments! No apologies necessary, Kirsteen. I understand that berries with whipped cream (whether it is compliant or not) does not necessarily follow the "Whole30 Spirit", but as others have pointed out, context definitely matters. For myself, I'm trying to make my relationship with food a positive one and I do not think I can personally accomplish that if I feel as if I am punishing myself. I hope that makes sense. Have a good weekend everyone!

Everything looks amazing!! I made the carnitas from Well Fed last week and they were scrumptious. Would you mind sharing what you did with the chicken breast to make it look so good? Mine NEVER come out looking like that.

I agree. I have not seen a non breaded chicken breast look like that. Almond coating? Share your secret please. :)

Heh no coating! I just used compliant italian seasoning and garlic salt and seared the chicken on both sides in a hot pan with ghee. The seasoning/dry rub enables you to "blacken" the meat and develop that crispy (and tasty) exterior. If it was a thicker cut of meat I would have put it in the oven in a cast iron pan or on a baking sheet. Since it was so thin, I just seared it on both sides, cut the heat, covered the pan with foil, and waited about 5 minutes.

I agree with this! I am really trying to make this my lifestyle, not just a 30 day challenge. If I don't let myself having anything I really love as a treat I will probably lose it and go get some sugary sweet treat somewhere! I would much rather have the coconut whip with berries and cinnamon. Perhaps it's not totally in the spirit of the Whole30 but it's all still compliant and I'm still eatting well and not cheating. For me, that will help me make this a lasting change instead of a temporary one.

Here's a few more to add to the repertoire

36495_10151914973446515_1589982324_n.jpg

GINORMOUS salad: Homemade Italian dressing (from Well Fed), sauteed shallots, cucumber, "summer slaw" (carrots, cabbage, and broccolini), and chicken

408316_10151924652211515_1283809609_n.jpg

This one isn't as pretty, but: zucchini noodles (or "zoodles") with roasted red pepper sauce (roasted red peppers, sauteed onions and garlic, basil, and pine nuts) and chicken

408557_10151924930911515_1426970844_n.jpg

Pureed cauliflower with ghee, roasted garlic, homemade chicken stock and sauteed mushrooms with ghee, garlic, fresh sage and thyme, and salt/pepper
