I am coming from traditional Whole30 and I also know that I need to avoid soy because of my many endocrine system health problems so I’m looking for soy and grain-free meat replacements. Personally I also cannot eat beans because of bloating and gas, but some of you might be able to so I thought I’d share my findings.

This recipe is for any beans. It uses cornstarch but you may be able to experiment with alternative starches. If you do I’d love to know what worked for you.

I also found this recipe that uses cashews, but it also uses beef gelatin which is not plant-based and I’m not sure what would be a good substitute. I wonder if maybe tapioca starch could work or if there’s a plant-based gelatin anyone could recommend?

I found this in the notes for the second recipe.

For vegan options: Dissolve 1 tsp agar agar powder with 1 cup hot boiling water. Skip 1 tbsp coconut or cassava flour in the recipe. And use either finely ground cashew flour or macadamia flour. Agar agar has stronger gel consistency than beef gelatin so you will not need coconut or cassava flour to bind the ingredients.

Here is a tempeh made from yellow peas. It’s not tofu, but it might be right for some of you. It includes only 3 ingredients and no special equipment needed so it’s minimally processed.

I also found this chickpea recipe that can be cooked, unlike the cold tofu recipe above. The honey in the ingredients list is just for the sauce. You can make the tofu with just chickpea flour, spices and water. This looks so easy I might try it just to see how my body reacts to the chickpea flour.
