Chicken and peppers

I used to make this yummy dish all the time:

Brown chopped up chicken breast, add sliced onions and red bell peppers, douse w/ soy sauce and simmer until veggies are soft.

I am making it now, with chicken thighs and coconut aminos. I was worried about the amino working right, but I just tasted it and WOW, even better than the original. Old days...good over rice. Today, great over riced cauli!
