What about mung beans?

Yellow mung dal (shelled and split yellow mung beans) seems an awful lot like peas, so I'm wondering whether this is an exception to rule against legumes. Ayurveda considers mung beans a highly digestible protein source, and they are a major component of kitchari, which is a staple of an Ayurvedic diet (and of Ayurvedic cleanses).

Yes, the sprout part isn't the problematic part so any type of 'sprout' is fine but the actual bean @brenner.peggyis excluded.  There are many foods that different eating mechanisms like Ayurveic would consider a good choice - for the 30 days of the Whole30, mung beans are not compatible.
