How long did it take for sleep to improve?

Day 5 is still very early, especially if this is a big change from how you were eating. I don't remember exactly when I really started noticing benefits, but it was probably closer to two weeks in. Here's a (somewhat tongue-in-cheek) timeline that gives you some idea of what to expect, although you should keep in mind that everyone is different, and may not follow it exactly:
