The day before………

I have preparing for R1 D1.  D1 (01.16.23). Today, I made the rounds at Costco, Aldi, and Harris Teeter.  I have a meal plan prepared for the week.

I have prepped 6 jars of Blueberry Banana Chia Seed pudding made with coconut milk.  I prepped a chorizo,caramelized onion and spinach frittata for breakfast preparing for the breakfast battle.  I hate preparing breakfast.  Coconut milk is ready for my coffee.  I can do this.  I have Chomps and RX bars available if needed.  I am prepared.  If I went completely plant based for 1.5 years, I can do this.  Nothing was harder plan being plant based during the Super Bowl, my birthday, Memorial Day, July 4th, Labor Day, Thanksgiving, and Christmas.  This, this is 30 days.  I can do this.  Why.

Why am I doing this?

  1. To improve skin, slow visible signs of aging
  2. Reduce inflammation in my joints, knees and toes
  3. Eliminate acid reflux
  4. Weight loss kick start
  5. To make myself better.  Feel better, look better, move better, love better, sleep better

I can do this.  I can do hard things.

All of these days are amazing!! I'm dying to know if you completed the full 30 days and what your final results are? Just reading your first 8 days has me excited about diving in. You're awesome!
