bonnynancy Posted January 16, 2013 Share Posted January 16, 2013 I was hungry for some good salsa, so I whipped up a batch with fresh tomatoes, onions, cucumbers, cilantro, lime and spices. So good, but what to have with it? I mixed the salsa with some fresh pineapple chunks, and OMG it was tasty and refreshing! I recommend trying it. GLC1968 Posted January 16, 2013 Share Posted January 16, 2013 Mmmm, salsa on scrambled eggs is one of my favorites...particularly fresh salsa! If you want to snack on it, carrots sliced into a chip like shape hold salsa really well. (So do zucchini slices, large mushroom slices or cuke slices!) I also sometimes just slice a HUGE cucumber pretty thinly and pretend its chips... only much, much better and then you get the crispy component too! I did the same with a carrot. Served the carrot "chips" with guacamole, which was just mashed avocado mixed with the last of my salsa. Scrumptious!
