Need new ideas for meals (AI protocol)

Hi everyone,

Just wondering if anyone has recipes they'd like to share for meals that follow the AI protocol (no eggs, nuts, nightshades, etc.). Bonus points if it doesn't use coconut as I'm intolerant of it now. I'm just getting a bit bored with my own creations.

I am currently AI and low FODMAP. I used to love eggs for breakfast. This morning I made a scrambled GF ground sirloin. I served it with wilted spinach (olive oil at the last minute), and roasted zucchini. I really don't use recipes. For lunch I had green beans and roasted zucchini, chicken salad made with some diced veggies, chicken and olives. FOr dinner I will have fish and veggies. I used to have all my meals figured out, but I feel like I am starting from scratch here. I also bought some fresh basil, dill and parsley to punch things up. I really miss my seasoning blend that had onions and garlic in it. Good luck!!

What's AI and FODMAP? I'm still getting used to so many acronyms!

Have you looked at thefoodee.com ? They have some pretty legit recipes and a whole section that is W30 approved. I found one for sloppy joes and we serve it on top of some mashed cauliflower. FAVORITE! Also, I think chowstalker has a section with nightshade free recipes you might want to check out.

I don't much use recipes either. Usually i look at a bunch, then just make my own. A favorite breakfast of ours so far has been a sweet potato hash. Sometimes we throw in some ground turkey, along with onions, some garlic maybe, butternut squash if we have it, and a chopped apple and cinnamon. Holy crap. I usually eat it with eggs, but you certainly don't have to. This morning we had chorizo, wilted spinach, grilled onions/bell peppers, a blood orange and a kiwi. Pretty legit. My po-wo meal today was some left over turkey burger and roasted butternut squash. Not sure what to have to my Meal 3. Had a bit of W30 chili at the inlaws but she used V8 in it, not sure how compliant that is.

Hey there! I am totally getting bored of my creations as well. Here are some good recipes I've collected from around the web. Some of them need a little modification to be AI appropriate.

I also make my own sausages a lot, basically tiny burgers made from any kind of ground meat mixed with whatever spices I am in the mood for. Tonight I am going to make burgers in lettuce wraps with caramelized onions and pickles. It's one of my favorites so far. Like aph above, I usually just cook up a meat and some veggies without any recipe, changing the spices and herbs to switch things up.

Aph, I feel your pain with the FODMAPs. I had to remove them for a bit, but luckily was able to add some back in in moderation. I've been roasting veggies with dill, garlic, and whatever else strikes my fancy. Fresh dill is so good.

SouthernBeth, AI is "auto-immune" protocol (essentially, no eggs, nightshade veggies, nuts); it's described in It Starts with Food. I'll try my best with FODMAPs; they are veggies and fruits that contain short-chain carbohydrates that are not digested well in the intestine. I've been making a hash similar to yours (meat/chicken, sw. potato, zucchini, onion, garlic, oregano, salt and pepper), but I've not tried it with apple and cinnamon--that sounds like a good breakfast option. Also, thanks for the idea about chorizo.

Gaileo, thanks for the links. I've been trying to find some websites that have some AI recipes. I made sausage my first week--I need to do that again. I've been doing "tacos" in lettuce wraps (romaine leaves, seasoned hamburger (garlic, onion, cumin, oregano) and "guacamole" (limited to avocado, onion, salt, and cilantro). I'm totally going to try a hamburger that way!

I've become a recent fan of pulled pork (not a common dish in Australia), it's just pork, whatever spices you're allowed and a bed of onions, in a slow cooker. I have been eating mine mostly with spaghetti squash, but also kale and zucchini (I love white zucchini). Grilled zucchini is also awesome with salt (really ups the flavour).
