Whole 30 again....

Just started my new whole30 on 4/3.  I did my 1st whole 30 many years ago, and have done many since then.  I have always gotten such good results and now I am at a stage in my life where I need to get things back under control.  I have been diagnosed with Celiac 3 yrs ago, and now having major arthritis issues, that could be bad. I need to get this inflammation down, so I can get back to be more active.

so today is Day 3.. I didn't prep for snacks - so that is a minor fail but have not deviated. I forgot how much prep work is sooooo important.  I also forgot how much I do not like coffee without sugar !  even tea at this point is not good either.... hence, that = I have too much sugar in my system.

I was excited to start this journey - the idea of getting rid of joint pain, swelling, fatigue, would do my body so much good !!  a friend will be joining me - but she has never done one before, so she is going to start after her birthday on the 10th. I know better than to try and force someone to do it when they are not ready.  I did join her and friends yesterday at a Mexican restaurant to celebrate her birthday. had a chicken fatija salad, no dairy, no dressing. used salsa and guac.

tonight will be /Mulligatawny Stew from Well Fed 2 cookbook.  I had forgotten all about that stew and it is so good.

day 5/30

I have to say - this is a bit of a challenge this time, sugar is my dragon.  I did not make the Mulligatawny stew, but made a pork loin and butternut stew instead. will make the other this weekend.

I did go get some w30 complaint waters from Costco - just to have some bubbly -  I was hoping I could still drink my oat milk - but that is on the forbidden list. I can not eat any nuts or nut milk.  so coconut milk it is.  I need to find one that will mix well in coffee for some iced coffee, the stuff in the can just won't do.

today's meals =. meal 1 was eggs with the pork stew, meal 2 was a huge salad, had an orange for a snack.  tonight - not sure as I am going to church service right after work. may have to be boiled egg, carrots, an apple or banana with some olives.  grab and go stuff.  Back to work - SEE ya

hmmmmm day 12/30

I've been struggling - but with my friend bethicca starting soon, I may continue on for a bit.

I made it through Easter, brought mashed sweet potatoes w/ ghee, and a raw veggie tray for my contribution.  Didn't have the heart to tell my dear mother (she finally gets the whole celiac thing) that NOW I couldn't eat her specially made for me, dessert. I just brought it home for my daughter. who said that was so delish.   I have been slacking pretty bad with meal prep. Lately I just do not want to cook, or make anything in advance. Which leads to slip ups, was going to say failure - but it is not really.  just not giving it my best shot.

So this weekend is suppose to be raining, so great time to clean out the fridge, get that sparkly and filled with already made food.  Wish me luck.

Good luck Tina! You can do this. I'm excited for your progress and failure is human. It's how we move forward that matters. Preparation is definitely key for success.

day 15/30  

Half way there. The food dreams have started, ate a donut last night - and was soooo upset that I just wasted the last 14 days.  in the same dream - I GAINED weight when it was all said and done.

 Walking through the check out at the grocery store was a bit hard - couldn't grab my Mounds for the ride home.

So got my crap together over the weekend. Cleaned my fridge so I could get ready for the new groceries.  and reorg it as veggies were not getting used.  I am shamed to say that I had to toss both spaghetti squash and green beans.   

Sat/Sun - made a roast, cut up greens to throw salads together, also shredded cabbage, made another serving of salad dressing, boiled eggs, made spaghetti squash casserole. (thanks Bethicca)   

This week, I plan on shredding rutabaga, turnip and parsnips for making breakfast fritters.  also read that turnips are good air fried - like French fries. 

Sunday M1 was potato hash with sausage, bacon, peppers, onions,  2 eggs

M2  -I don't recall eating. oooppps. - I did a lot of snacking on veggies and fruit while cleaning

M3  spaghetti squash casserole, mashed potatoes, roast beef

Today M1 was cabbage bowl, roast beef, onions, peppers

M2 was the last of the roast beef, riced cauliflower and grilled asparagus.

M3 will be stuffed yellow pepper.

Yum...yum...yum. I'm drooling while reading this. The healthy meals you are making sound so much better than some mounds bar anyway, but I can relate. Sometimes I think I want things even more when I can't.  So glad your "cheats" were just dreams. You've got this!

day 16/30

I kinda feel like I wasted the 1st 15 days.  Yup. sure do.  However, need to go forward. I was taking my diclofenac as I have so many aches/pains while sleeping.  I know that it is highly suggested to stop anti-inflammatory drugs.  I did that for my very 1st whole 30, never went back to using Advil or the like since. I did actually stop using diclofenac at that time as well - I had been using it due to plantar fasciitist.  That decreased greatly, so I was able to stop the diclofenac. the last 2 yrs have been a bit tough. 2 knee scopes, carpal tunnel surgery, trigger thumb surgery.  Also injections for arthritis.  Feeling a bit like I'm falling apart.

All that to say~. I have stopped the diclofenac -  I am still going to use the cream.  I have some oils that I am going to try.  we will see how this goes !

I'm so sorry you are having any kind of pain. Does the Whole30 restrictions of sugar help lessen the pain at all?  There are a lot of whole foods out there that help with inflammation and sleeping.  Regardless,  I hope you feel relief soon.

day 19/30

Since stopping the diclofenac, I have been sleeping better ! so 1 NSV.  I have been staying track, I do miss my popcorn !  the cravings are getting a bit less, it is in my head - my stomach is not really hungry.  it is the hardest when I am bored, or upset - I tend to eat my emotions.

making stuffed mushrooms and maybe some stuffed sausage patties.  also still need to shred and roast those root veggies for either a side or to add to a stew

working tomorrow - so maybe pop back on

I was just reading about all the psychological benefits of the Whole30.  You are going in the right direction and being on Day 21 is so impressive. I do appreciate all your shares too. Knowing that there are still struggles weeks in makes me feel like I need to give myself a break. One day...and bite at a time. Emotional eating is huge for many people,  but you clearly have this. I love your dedication.  I'll be thinking of your posts when I'm going through my own 30 days.

bethicca ~. you guys will smash this !!  yes. there will be tough days.  but it is just a day  or maybe even a few hours of tough.  just trudge on through !

I have to find something to preoccupy me when it is hard. Like when Brooke brought home Doritoes for me (found some that are suppose to be GF) I had to leave the room. 

so... lets see it is day 22/30

I worked Saturday - so ate was already made - don't remember because Saturday schedule is really wonky,. I did make burgers on Saturday night

Sunday was a big cook day. roasted broccoli, carrots, sweet potatoes. Shredded parsnips,  turnips, and some potatoes. Used some of that as the base for an egg bake. Egg bake was sausage, onion, peppers, spinach.  it was so good.  the leftover will be used as side veggies or fritters.  I also diced up the remaining to make hash.  Made more meatballs - my kid ate almost all of the last batch !  

Also made rice for my kid and dog, had to use up some broth that I had made - and that really does make rice taste so much better. I have a rice intolerance so I won't be adding back any rice or products with rice in them.  I was contemplating getting allergy testing done, just have not actually done the research.

Still have lettuce shredded for salads, peppers, cukes, tomatoes, mushrooms.  I have the mushrooms to make stuffed mushrooms but not sure I have the steam to get them done.  Might freeze them to make into cream of mushroom soup.  

tonight making my daughter and her family a baked ravioli casserole, going to make up a sauce and have it with my meatballs.  maybe try it with the shredded veggies. OHH. I can roast mushroom caps and stick a meatball on it !!   Air fryer - here I come

well should probably get back to work.

day 29/30

Honestly not feeling much different than when I started....  so I will probably continue on - that was my intent in the beginning anyway.

 

well my computer died yesterday -Monday-  So back today

Day 30

I think my initial W30 broke the mold for me- all the other w30's have not lived up to how that initial one helped me so much. I think because back then I REALLY REALLY  needed a reset.  REALLY NEEDED.  I had not gained all the weight back, have stayed under 200, mostly 180's.  Not my ideal but never got back to 220.    I have not had bad plantar fasciitis like I I did then, no acid reflux, no tons of water weight.

Now - I have this arthritis and bad knees.   i really believe that my diet will help with that.  I just have to do more research and figure out what are the best foods. my friend Beth said celery seed helps with arthritis.  I can alway count on my friend to help me with research - she loves digging into all the deets.

so I will be back tomorrow !

I'm excited to share recipes. Have you tried the celery slaw?  I'm sure it's not some magical healing meal, but I'm learning so much with this process. And it's certainly a  yummy side. Just reading about leaking guts and how so many of the additives I was eating daily can sneak through the gut and cause health issues.

I forgot to say Congratulations on completing your Whole30!!! You are awesome! I'm seriously so happy that you made your health a priority and know you are worth it. You're truly inspirational!!
