I've made it with shrimp, chicken, and beef and its always awesome! Top it with green onions and toasted almonds and you'll never want to reach the bottom of your bowl! I end up having the grilled chicken with the sunshine sauce and veggies as a salad. I bought extra squash this week, and I'm not making the meat sauce I usually serve it with.
