aph
I just bought a nice balsamic vinegar from a fancy olive oil store. The bottle didn't state the ingredients, but in a pamphlet is lists caramel color.

Guest
My husband was just researching this and found that this is very common in America. Cooked grape must and caramel color are added to vinegar. I can't wait to get to a store that might have a properly aged kind to see if it is even more amazing. Susan W
Nico, if you look for organic balsamic, it will be free of weirdness. I buy Napa Valley Naturals. I have found it not only at Whole Foods but also happily at my neighborhood Albertsons for a lot less. Grape must is not a bad thing and is used in wines and high quality vinegars.
