Sharon Simpson Thumann
First, is fermented ketchup allowed and if so, any good recipes?
Kirsteen
What's actually in the ketchup? The recipies I've seen for fermented ketchup online have mostly used whey which is out and all have used fairly large amounts of honey or molasses to sweeten it. It's not something I've ever tried so I don't know what it's like or any recipies that use it.
Sharon Simpson Thumann
I found a recipe that that uses honey in the process but doesn't the fermentation eat up the sugar? The recipe also calls for whey but suggests using fermented vegetable brine or buying a starter culture. Thanks for responding.
