Michaela Elmore Cogswell Posted January 28, 2013 Share Posted January 28, 2013 Proscuitto-Wrapped Chicken Breasts. I usually cut the breast into about 4 pieces, season with salt and pepper and wrap each in half or whole piece of proscuitto, basically so it's mostly covered. Stick on a skewer. I usually get two to three pieces onto each one. Into a hot saute pan with a bit of your favorite oil. Cook until the chicken is cooked through. Really tasty and simple. I added red pepper and will try it with shrimp next time. Heats up beautifully for lunch. DocIKY Posted January 28, 2013 Share Posted January 28, 2013 I second the "well fed" cookbook suggestion. I use several recipes from that book every week for my cook up. One of the things that I love about the cookbook is many of the recipes have several variations included to keep things from getting boring.
