Hi, if you've got the book chapter 19 is all about reintroduction. Basically the best way to do it is to space it out over 10 days. Day 1 introduce and evaluate dairy. Day 4 gluten containing grains, Day 7 non-gluten containing grains, Day 10 legumes. Keep the rest of your diet W30 compliant and you'll be able to spot right away if anything is causing problems.

Of course not everyone comes off a W30 after 30 days, some people continue longer and some are already so convinced that some foods are not healthy that they continue to avoid them. I really would recommend reading the book though, it's got all the info you want. Good luck

More seriously... The Whole30 is an experiment for you to learn how what you eat affects you. With what you learn during the experiment, you can make good decisions about what to eat for the rest of your life. So what happens after 30 days is totally up to you.
