Easy sweet potato, bacon and spinach frittata

Here's an easy 15 minute breakfast with a good mix of protein, fats and carbs, sweet and salty with a spicy kick. It's a big hit around my house...

  • Peel a small sweet potato, stab with a fork a few times, microwave on high for 8-10 minutes depending on wattage
  • Slice three strips of raw sugar free bacon into small chunks, pan fry at med-high heat until desired crispness, remove from pan, leave the fat
  • While bacon is cooking, finely chop 1/4 to 1/2 cup fresh spinach leaves, and whip three or four eggs together
  • When sweet potato is done, quarter and slice it, fry in bacon fat until browned and crisp on the outside, but tender on the inside
  • Add the whipped eggs, bacon, and chopped spinach to pan with sweet potatoes. Season with a few dashes of cayenne, and a touch of salt and pepper if desired
  • Cook on med-high heat, flipping the frittata if you want a crisp exterior on both sides
