JimS Posted June 14, 2012 Share Posted June 14, 2012 Here's an easy 15 minute breakfast with a good mix of protein, fats and carbs, sweet and salty with a spicy kick. It's a big hit around my house... Peel a small sweet potato, stab with a fork a few times, microwave on high for 8-10 minutes depending on wattage Slice three strips of raw sugar free bacon into small chunks, pan fry at med-high heat until desired crispness, remove from pan, leave the fat While bacon is cooking, finely chop 1/4 to 1/2 cup fresh spinach leaves, and whip three or four eggs together When sweet potato is done, quarter and slice it, fry in bacon fat until browned and crisp on the outside, but tender on the inside Add the whipped eggs, bacon, and chopped spinach to pan with sweet potatoes. Season with a few dashes of cayenne, and a touch of salt and pepper if desired Cook on med-high heat, flipping the frittata if you want a crisp exterior on both sides Link to comment Share on other sites More sharing options...
