joanne Posted February 2, 2013 Share Posted February 2, 2013 you could make a fried "rice" using cauliflower and dice up the thighs to go in there! it's a good recipe in general for any leftover veggies / protein you have. another idea is to chop them and put them into a curry like this one. good luck! personally i love eating chicken thighs on their own with a side of veggies, so that would be the easiest way to go Link to comment Share on other sites More sharing options...
Colleen Roy Posted February 2, 2013 Share Posted February 2, 2013 I like doing the salad plates in Well Fed when I have lots of veggies that need to get used up-quick and easy. Though, it is better in the summer when it's too hot to cook! But you could cut up the chicken thighs and other stuff and make a stir fry or soup. That would be good too!
