Beef heart recipes?

I have the opportunity to get a grass fed beef heart this week - must order it by tomorrow night to get it on Thursday. I have never seen one, much less cooked one. However, the nutritional profile is outstanding, so I am totally game. All the recipes I have found involve dredging pieces in flour and frying a la chicken fried steak. I have stopped eating nuts, so nut flours are out. Does anyone have good beef heart recipes that do not involve flour? Truly, this is a question I never expected to ask in my life. :lol:

Coconut is a fruit, not a nut, so maybe you could use coconut flour? Or tapioca starch? I don't know why I bought a bag of tapioca starch once, but you can use it like flour for dredging purposes. Tapioca starch is from yucca root.

When I cook chicken hearts, I don't dredge in anything. I just cut them into bite-size pieces and cook with some chopped onion and spices with a generous splash of apple cider vinegar. I usually eat them over wilted greens with a handful of dried cranberries for tartness. I'm sorry I've never worked with beef heart.

You just made my day, and my next 30+ days at least. :) I am thrilled to hear that coconut is a fruit. Part of the reason I have delayed going full force AIP is preparing myself to give up coconut products.
