melbournegirl
I woke up really tired today despite 9 hours sleep, did I have too much??? LOL I don't have a clear answer to your question of the day but I believe ISWF and some forum posts indicate beef is the best source of protein in today's world so no probs having lots of that. I believe eggs have some additional features that make them particularly good for inflammation. So I think you might have it covered. I worried about mixing it up for the first 30 days or so but now I am over it. I just have what I feel like and that is most often beef and eggs with some fish, pork, chicken and lamb during the week depending on family meals cooked. KC Sunshine
Haha sometimes I have trouble getting up after too much sleep. Awesome response - I'm gonna keep going with beef guilt-free, although today's salmon wasn't bad. I may also add in some chicken - trying that for the first time tomorrow. Today's meals: Breakfast - salmon pan-seared with black pepper, rosemary, parsley, and lemon juice + onion, cauliflower, brocoli stir-fry with some spinach on the side & 2/3 an avocado + 1 fried egg Lunch - same as breakfast Dinner - chili with onions, spinach, carrots + onion, cauliflower, brocoli stir-fry + 1 fried egg Cut back a bit on the meals today - put in only 1 egg instead of two. It was okay for the chili meal, but I think I need a bit more at lunch. I'm finding my energy levels dip quite a bit before dinner, may try adding some more protein / fat at lunch. Also, one of my roommates is a french chef - he just made some super awesome looking burger / rice combo, but I am feeling pretty good in my Whole30-ness, and am not even tempted (although the mouth waters just a bit ) I cooked a TON of chili last weekend that just ran out today (lasted like 8 meals). This Sunday I'm going to be cooking something else - I'm thinking curry, but am open to suggestions - let me know if you've got an idea for something delicious that can be cooked in bulk! melbournegirl
I love curry! There are some nice paleo beef stroganoff recipes, tomato, coconut cream, mushrooms etc if you are after a quite different flavour. Also what I often do is make a big batch of puréed soup then add a different sliced cooked meat to it for variety. This is often my breakfast or lunch. The days are rolling on very well for you Casey, well done!
Susan W
Casey, beef is great and so are eggs, but variety is good too. I eat a lot of beef and eggs but also throw in chicken, salmon (twice a week), other seafood and some pork. Someone on these boards makes a big amount of curry and veggies and then adds different proteins for variety like Juz does with soups. I really like that idea. Right now I have a big brisket wrapped in foil cooking on low in my crockpot for 12 hours. It will be ready at 7am tomorrow. Can't wait to have it with sunny side up eggs and a big pile of spinach and mushrooms for breakfast.
KC Sunshine
So jealous of your brisket!! Take pictures Thanks for the idea for stroganoff Juzbo - I may give that a shot. Also picked up some chicken today, may add it to curry or meals tomorrow, although I may also look for an interesting recipe and experiment a bit. Today's meals: Breakfast - eggs + ground beef + mushrooms + cauliflower + onions + spinach + jalapenos + avocado Lunch - same Dinner - seasoned ground beef, onions, spinach, and olives Post-dinner - club soda at a bar with a friend I cut up 3 onions and some mushrooms today - I'm aiming to cut down on prep time during the week by cutting up a ton of veggies over the weekend. Tomorrow I'm going to do more mushrooms, some brocoli, and some garlic : ) Went out with a friend tonight and didn't even think about getting anything but club soda or water. Viva la vida! melbournegirl
Tom has a nice lemon chicken recipe. Its more of a casserole. It lasted me three days and then I used the leftover sauce as a tangy soup base. Are lemons available/inexpensive in Japan? I have a tree here... KC Sunshine
Nice - any chance you have a link to that? I looked around but couldn't find it - lemons are quite accessible over here. Today went pretty good - was a little out of it, but I don't think it was food related. I also cooked up a HUGE thing of curry and am pumped to try it this week. Today's meals: Breakfast - steak, egg, spinach, broccoli, onion, mushroom, avocado, salt, pepper, garlic Lunch - more of the same Dinner - eggs scrambled with spinach, broccoli, onions, mushrooms, some curry paste, salt, pepper, and avocado Lessons learned: Curry and eggs don't necessarily mix. I've been getting like 6-7 hours of sleep the past week (with maybe 7-8 on the weekend), but I've been waking up late and missing my morning commitments. Tonight I should get 4-5 and then be back on a normal schedule.... not ideal, but that's life. Hopefully I can get a solid 6-7 the next day. KC Sunshine
Awesome - thanks! Yeah I've just been using NomNomPaleo and TheClothesMakeTheGirl. Missed the resources section - thanks for pointing it out!! Today was interesting to say the least. Only got 4 hours of sleep last night so was tired during the day, but didn't get any major cravings, which I thought was surprising. I've also been eating some super rich curry & avocado, so my body may be just fine with the fat/carb/nutrient consumption going on : ) Also, was biting through some chicken curry this morning for breakfast and realized it was undercooked - one piece was actually red!! I immediately took out all the chicken and cut them up to see which pieces were cooked, but had to throw out about 30% of the chicken in that bowl. Also, I realize I definitely ate a few uncooked pieces, and they had a nice effect on my digestive system (let's just say I was a frequent visitor of the loo for the duration of the morning haha), but I'm feeling back to normal now. Today's meals: Breakfast - curry (onions, peppers, sweet potato, broccoli, pumpkin), chicken Lunch - curry from above with shrimp instead of chicken on top of spinach and an avocado Dinner - stir-fry scallops with broccoli, cauliflower, onion, mushroom, and garlic + a fried egg over a bed of spinach All in all, pretty good day despite the circumstances, and glad I noticed the chicken was raw before I ate too much. Am gonna throw the rest of the chicken into a pan and stir-fry it a bit before adding it to curry going forward. Also, I'm gonna add some fruit o the mix tomorrow - will keep you posted. Can't believe it's already been 2 weeks!!
KC Sunshine
Lack of sleep caught up to me today - felt like I was on autopilot. Luckily no cravings, but I know it's not sustainable. Gonna get 8-9 hours tonight!! Today's meals: Breakfast - curry (onions, peppers, sweet potato, broccoli, pumpkin), chicken Lunch - curry from above with shrimp instead of chicken on top of spinach and 1/2 avocado Dinner - Dinner - stir-fry scallops with broccoli, avocado, onion, mushroom, and garlic + a fried egg over a bed of spinach I'm really enjoying the curry, and I've recently found a good way to do scallops that tastes awesome. It's exciting, b/c before that all I had to work with was beef, eggs, and shrimp - I'm going to continue to experiment with salmon to see if I can find something that works - gotta keep up the variety : ) Lessons learned today: Sleep. G'night everyone. KC Sunshine
Last night was up late working (which I know is unhealthy behavior), and didn't get a chance to update my log. Gonna get to sleep by 11 tonight - shooting for 8 hours! Yesterday's meals: Breakfast - curry with chicken over spinach Lunch - shrimp with curry and an avocado over spinach Dinner - steak and eggs with broccoli onion mushrooms daikon (radish) Brussel sprouts lettuce and spinach with an avocado Keep calm and carry on. KC Sunshine
Let me know! I've been thinking about looking for one in the local international foods store. Today's meals: Breakfast - curry, shrimp, spinach, avocado Lunch - same Dinner - leftover steak & eggs + veggies from yesterday Unfortunately, since I've been doing curry almost every day for breakfast AND lunch, it ran out one day too soon : ( That means I'll be cooking three meals tomorrow - I think I'm going to to omelette for breakfast and an open taco / ground beef stir-fry type thing for lunch & dinner. The poor sleep is catching up to me - coming down with a sore throat. Should get 7 hours tonight....
KC Sunshine
Yesterday's log: Breakfast - eggs, spinach, onions, mushrooms, broccoli, chili peppers, some ground beef/pork, and avocado Lunch - open taco / taco salad - ground beef/pork with cumin, chili powder, salt, paprika, garlic, and chili peppers + cabbage, spinach, red peppers, green peppers, yellow peppers, and avocado Dinner - more of lunch Mixing up the variety a bit today - will give ya'll an update tonight : ) Also, I'm considering doing a beef stroganoff for tomorrow's Pot o' Food for the week - any other suggestions? I may also just do curry instead, b/c that was fantastic last week.
KC Sunshine
I slept for 11 hours last night - guess I'm still catching up. My goal for the week is to ease into a schedule where I'm getting 7-8 hours of sleep a night, and to spend <1 hour a day cooking and cleaning (lately it's been 2-3). If anyone has tips on efficiency, I'm all ears! Yesterday's meals: Breakfast - egg with mushrooms, onions, jalapenos + avocado + spinach Lunch - sirloin steak + onions + broccoli + spinach + avocado Dinner - same Today's meals: Breakfast - heated up leftovers (steak stir-fry) with some eggs + the last bit of leftover curry + an avocado over a bed of spinach Lunch - steak & eggs, onions, spinach, avocado Dinner - lamb, onions, mushrooms, garlic, cauliflower, spinach, avocado They had sliced lamb today at the supermarket - it's been so long since I've had it! It was super delicious
xacerb8
I do a cook up on the weekends. Takes about three hours of prepping/cleaning, and then whatever oven/slow cooker time. I'm cooking for myself and two kids, but the kids rarely touch a vegetable. 6 chicken breasts - roast in oven 2 lbs of ground beef - brown and store following the ISWF recipe 1 large casserole pan of roasted root vegetables 1 dozen eggs- hardboiled There are a few easy same-day vegetable recipes that I use: Roasted asparagus: http://www.simplyrecipes.com/recipes/roasted_asparagus/ Carrots: http://edeandanna.wordpress.com/2012/08/20/recipe-report-cumin-roasted-carrots-a-well-fed-recipe/ Indian spiced sweet potatoes: http://www.janssushibar.com/indian-spiced-sweet-potatoes/ Also: paleo mayo + hardboiled eggs for egg salad or tuna or chicken Try the no-fuss salmon cakes from ISWF. A recipe makes a dozen, which is 6 meals worth. They're great on salads!
KC Sunshine
Thanks Xacerb! I haven't gotten to the recipe section yet in ISWF - will have to look into that, especially b/c salmon is EVERYWHERE here in Japan, and dirt cheap. Also, will need to get on the hard-boiled egg bandwagon - I've just been scrambling or frying them. Do you store the cooked food in the freezer? Anyways, I'm still low on sleep, but getting at least 6 hours a night, and will get about the same tonight. Today's meals: Breakfast - leftover lamb & steak with mushrooms, onions, etc. and avocado - delicious Lunch - shrimp with veggie curry over spinach with a half an avocado Dinner - same as lunch I think I may need to add some more carby-vegetables if I'm going to ration my curry throughout the week - there's a lot of pumpkin, sweet potato, and cauliflower in there, but I'm trying to make sure the curry lasts through Friday night. #luxuryproblems
xacerb8
I love the hashtag. Must incorporate it into daily use! If you want to try the most delicious carby-vegetable *ever,* may I suggest fried plantains? Honestly, I never have to eat a french fry again. Just google it. So, so, so delicious. I don't freeze any of the food I make, because it's going to be eaten within the week and I am not really that freaked out about "old food." (no food poisoning incidents thus far!) The one thing I have frozen and had a great result with is shredded cabbage. The head I bought was huge, so I knew I'd only eat half. I shredded all of it and put the extra into a large ziplock bag. So the cool thing is that when you defrost it, it has the slightly limp texture of cooked cabbage, but ever so slightly crispy when you bite it. KC Sunshine
Thanks Xacerb. I'm generally okay with chilling veggies, although lately I've been running out of room in the fridge - may need to start freezing things!! Here are my meals for the day: Breakfast - steak, eggs, mushrooms, onions, leek, spinach, brocoli, cauliflower Lunch - curry (with lots of great veggies inside), shrimp, avocado, spinach Dinner - steak, onions, mushrooms, LEEK, with spinach and avocado Today's lesson learned: Sauteed leek is amazing - new favorite veggie!! KC Sunshine
Got a cold, but still had a good day. Eating down my curry, eating steak and lots of avocados. Life is grand : ) Here were today's meals: Breakfast - curry (filled with sweet potato, pumpkin, peppers, broccoli, cauliflower, onions), shrimp and avocado over spinach Lunch - 1/2 a sirloin steak & some extra ground beef from the day before + 2 eggs with leek, onion, spinach, and brocoli Dinner - curry with shrimp and avocado over spinach (as you might be able to tell, this is a bit of a theme) I've come a long ways from day 1, but no letting the guard down now! Need to stay vigilant and want to mix in some more variety - I'm thinking beef stroganoff sometime this week. Also may pick up some cayenne & cilantro for additional spices. It's Wednesday. DO WORK! melbournegirl
Casey you are going great! Good on you! Watch out for an extinction burst, often around day 22...l.
KC Sunshine
Extinction burst? That when the sugar dragon comes back in full force? I'll keep an eye out : ) I noticed recently that at the supermarket near my house, they keep all the non-approved food in the last aisle that you have to walk down to check out. It's just all sweets, baked goods, dairy, juices, and alcohol - lead me not into temptation! Haha. Anyways, I've got a new roommate moving in on Saturday, so I'll have to cut my fridge usage in half. To adapt, I'll be using more of a just-in-time method of grocery management, where I don't keep stocked groceries for days at a time, and I try to only buy what I'll eat in the next 1-2 days. I think using a shopping list more will help with this transition, because I've been pretty much freestyling it up until now, but that means sometimes I'll buy too much meat or spinach and have to eat it down for 3-4 days. Today's meals: Breakfast - curry + shrimp + spinach Lunch - steak + eggs + avocado + onion + mushrooms + leek + garlic + brocoli Dinner - steak + avocado + onion + leek + mushrooms + garlic + peppers I'm getting a bit sick of stir-fry - going to try beef stroganoff this weekend. -Casey
