Recipes for Sunchokes and or Bolivian sunroot?

We all picked up a huge order I made last night from a local farmer delivery service. Among the meat, eggs and familiar produce, I ordered some new things. Sunchokes? I started googling this morning and am a bit nervous because some folks say they react in the stomach like beans?

I also got Bolivian sunroot, aka yacon. So cool that local farmers are growing things like this in Georgia!

If anyone has cooked these with success, please let me know! :)

Thanks very much Tom - that is a perfect recipe and story. I will be careful not to eat my fill, as I often do with other veggies. I do not have a pressure cooker, so will do it in the oven. I have also bookmarked your blog. :) While I was there I saw your recipe for pulled roast and turnip gratin, and since I have 4 lbs of turnips, I am going to try that too. I will have to use coconut oil instead of ghee. I appreciate simple recipes!
