lulucandoit!
We all picked up a huge order I made last night from a local farmer delivery service. Among the meat, eggs and familiar produce, I ordered some new things. Sunchokes? I started googling this morning and am a bit nervous because some folks say they react in the stomach like beans? I also got Bolivian sunroot, aka yacon. So cool that local farmers are growing things like this in Georgia! If anyone has cooked these with success, please let me know! lulucandoit!
Thanks very much Tom - that is a perfect recipe and story. I will be careful not to eat my fill, as I often do with other veggies. I do not have a pressure cooker, so will do it in the oven. I have also bookmarked your blog. While I was there I saw your recipe for pulled roast and turnip gratin, and since I have 4 lbs of turnips, I am going to try that too. I will have to use coconut oil instead of ghee. I appreciate simple recipes!
kshacklett
haha glad I came across this. I'm hoping to find some this weekend to use for a recipe from Practical Paleo - I'll make sure I dont' make too much!
