Rachael2288
After an entire birthday weekend full of non-whole30 food and LOTS of sweets I woke that dang sugar dragon back up... shoot. So I was cravings sweets like crazy and decided to kill it with some Cinnamon Sweet Potato Fries! They worked like magic and I honestly don't think I ever want savory sweet potato fries again! They are super easy too and up on my blog, but I will copy the recipe here too for convenience Ingredients: 1 Sweet Potato/Yam 2-3 Tbsp Coconut Oil, melted Pumpkin Pie Spice Cinnamon Sea Salt Flakes (optional) Directions: Pre-heat oven to 425 degrees Wash and peel your sweet potato Cut in half, slice into 1/2 inch pieces, then cut fries out of them (the thinner, the crispier) Toss fries with melted coconut oil in a medium bowl Spread on foil covered rimmed cookie sheet Sprinkle very liberally with pumpkin pie spice and cinnamon Sprinkle on sea salt if you like a sweet/salty combo Bake for 15 minutes, toss/stir and spread back out on the sheet Bake for an additional 10 minutes Turn on broiler and broil for 5 minutes to crisp them up, but watch them to ensure they don't burn (It happens quickly!) Remove from the oven and let cool for 5 minutes before devouring Hope you like them!
