Wild Mushroom Saute and Chicken in Tarragon-Mustard Sauce

Dinner was MIGHTY FINE last night.

I started out the day with BP Coffee and Tea, my usual

Banana and Sunbutter

then dinner.

Day 16 - not so terrific today.

I went to Kenosha today and had lunch with my Aunt Sally and her friend Joan at Meals on Wheels. Need I say more. . . .

I can't believe they're serving seniors with all their health problems pulled pork with sugary barbecue sauce on top of soft, doughy, dry wheat buns with low-fat cream (?) of mushroom soup and canned dole cocktail fruit for dessert. Not a good day for the kid. I had just enough energy to throw together a chicken salad on some greens.

I wasn't rude . . . I tried to eat the shredded pork - the rest - just said I wasn't that hungry . . .I had a big breakfast, which was true because . . . .now that I'm not reacting to eggs, I fried up some beautiful orange yolked eggs, runny and yummy with some thick slabs of bacon. Soooooo

Today I ate:

BP coffee

Tea

Bacon and Eggs

Icky, yucky pulled pork blehhhh

Chicken breast on salad greens with avocado and lemon vinaigrette

Aw shucks Thanks, I'm gettin my blush on you guys! :wub: . Trust me, if I can make these dishes anyone can ;).

I didn't have the ring molds to make the pretty towers on the cover of Amber Beam's book, but I used the same ingredients and added some olives, just 'cause I love olives so much. The taste of the chicken salad (I added dill to it) and creamy mayo with the crunchy cukes and sweet globe grapes . . .yes it was deeelish! Filling too, I wasn't hungry until I got home from work.

I finished off the day with an apple some sun butter and a few slices of summer sausage.

And of course I started my day the same as always with Bulletproof coffee and some tea.

Time to go read up on my peeps find out what Nadia, Derval and Freedom and everyone else is up to.

Day 18

Slept 8 hours and 51 minutes at 97% efficiency last night. I did wake up several times, but went right back to sleep. Looks like my sleep patterns are normalizing.

What I'm most excited about is my reaction to eggs - I'm able to eat them again without the gas, bloating and constipation I used to experience. Very cool! But will somebody please tell me . . . .

how to cook 2 freakin' eggs so they're both sunnyside up and pretty? I know, it's really not necessary, but it's always bothered me how my eggs turn out. That said breakfast was still yummy, and yes I like a lot of pepper on my eggs . . . .

Lazy day today, I mean work wise. I worked out, upper body kettle bell routine. Fixed my breakfast, caught up on emails - going to my meeting at noon, and coming home to finish my recipe challenge - still a few more to go. . . .

how to cook 2 freakin' eggs so they're both sunnyside up and pretty? I know, it's really not necessary, but it's always bothered me how my eggs turn out.

HAHAHA I totally have this issue all the time! I just fry my eggs apart from each other and flip them separately.

Day 19 All ready?

Yesterday (Day 18) I ate:

BP coffee

Tea

Eggs, Bacon, Broccoli and Green Beans

Pear & Sunbutter

Grilled chicken thighs

Romaine lettuce, blueberries, pepitas, onions, & lemon vinaigrette

Nope, I didn't get to my Radish salad. I will, yes I will. And tonight is Pork Tenderloin night with Apple & Celery Root Hash.

Took 20 minutes and did my HIIT, or Tabata, whatever - full sprinting on my rebounder for 30 second, rest 2 minutes. Up to 6 rounds now and feeling really good after - not tired, not cranky, yep, all like that good, bi**hin' good . . . .

Hi Nanette! Still reading your posts! I enjoy reading them. I took your advice and went past 60 days and am on day 71. So far, feeling a lot better. I finished with my h pylori protocol about 9 days ago and wow, my bloating and burning has improved immensely. I was looking at your logs and it seems as though eggs are okay for you now? I may have to retest those at some point. You must be getting close to retesting for the h pylori soon?

Good to hear from you. Great news on the bloating and burning improvements. Yes, eggs are okay for me now. I won't be retesting for Hpylori for another 15 to 20 days or so, unless my "coach" suggests I go a little longer. Right now I'm still focused on a candida protocol. We switched up my current protocol to include some new digestive enzymes and a stronger probiotic.

I gotta tell ya' I will be very happy when I can finally say goodbye to all these supplements and protocols. Worth it? You bet! Tedious, Oh yeah!

OMG dinner was the best yet. My dh grilled a beautiful pork tenderloin and I finally got around to making the Apple & Celery Root Hash.

Crazy good energy today . . . .tomorrow my dh and I are going for an AIS demonstration. AIS stands for Active Isolated Stretching and Strengthening. DH has a really painful hip problem and his Dr. sent him home with some Nsaids and told him to rest. Typical, right? In the meanwhile the other meds he's taking contraindicate taking Nsaids and could put him into renal failure. Does it never end?

At least his cardiologist caught the problem with his meds. Sooo, wish us luck, I'm really hopeful we'll find some solutions for him. He's doing pretty good on paleo, from what I see anyway. . . . .

Homemade Strawberry Jelly filled Donut (Yikes!, I know right?)

2 Grass fed beef hot dogs

Avocado, Tomato and Cuke smash

Coffee w/coconut cream

Day 21

I lived! The jelly filled donut did not kill me. Still waiting for the sirens and the EMT's to show up though LOL. Seriously, I have no idea where that came from.

My dh and I left at 11:30am, (following a coffee meeting with a friend) for an AIS seminar. Two things. AIS is Active Isolated Stretching. You can learn about it here. I didn't eat any breakfast - that's not unusual though. We were early for the seminar so we went looking for a coffee shop and found a small town bakery - really cool little place, everything made on site. It smelled sooooo good in there! There was one last Strawberry Jelly Filled Donut left and it became mine!

I have to admit it tasted awfully sweet - almost sickeningly sweet the first few bites, but then I thought I'd died and gone to heaven . . .sugar addiction is sugar addiction - doesn't matter how long I'm away from it - I know that just one bite - and I hear MORE.

The only thing I didn't fix from last week's menu was the radish salad. I can still do that though. I also have a chuck roast thawing out to crockpot and liver thawing out for tonight. Yep, it's a liver & onions night, tonight.

Breakfast way waaaay good - lots of fat and protein . . . . .

I'll have pics tomorrow morning;(. Liver and Onions were outstanding, we served 'me up with a bunch of Brussels sprouts. I've been adding butter in today, so far so good.

Made some really good, and good for you blueberry lemon gel squares. I used Great Lakes Gelatin to make it. Pics tomorrow.

Day 21 and I ate:

Black tea

Eggs and bacon

Broccoli, green beans and cherry tomatoes

Blueberry Lemon Gels

Liver &Onions

Brussels Sprouts

Frozen cherries

Went for a loooong walk today. Felt good to get outside even if it was a tad chilly.

Haha great minds think alike - bacon/eggs + liver onion day for me too!

I've tried to make gelatin squares before and they separated!!! They were two layered yucky whatever. Maybe I haven't whisked long enough. Can't wait for you to share the recipe.

b7b01d1c94c711e285a622000a1f9e5b_6.jpg Pretty, no? Anyway, you can find the recipe here. Depending on how sweet your blueberries, if you have a sweet tooth?, you might want to add something to it like stevia or less lemon juice. I like it a little tart.

Wow! That's something else, alright. Is glitter compliant for the AIP I'm curious?

I know, right? What I don't know is - what is AIP, now I'm curious?

Day 22

Long, lazy day today. Made one of the best chuck roasts I've ever had in my Hamilton Beach today. I found the recipe at Civilized Caveman . He used a 2 lb. round roast, but my chuck roast worked out just fine, thank you ma'am. The secret was in the Balsamic Vinegar - it's a dark chocolate balsamic vinegar I found at a specialty shop in Downers Grove, really yummy;).

I've been noticing that when my plate is more full of veggies than meat, I get full a lot faster, I eat a lot less and I feel a lot better.

Super neat! Bonus - adorable nails on the recipe page! No sweet tooth, thank good. I will make them soon. I wonder if blackberries will work, I have a pack since forever in my fridge.

I think it's time to explore new organ meats. I also like chicken hearts and gizzards. Super curious about beef kidney. I feel that Susan will come and punch us :D

I have a beef heart and a tongue in my freezer, I know, still wondering how to make them. Be brave, figure it out and try new stuff, right Nadia? I think blackberries would taste mighty fine, probably a little crunchy though . . .

No pics tonight, too hungry and was in way too big a hurry to get to my next meeting.

Saw Aunt Sally today. We ran a lot of errands today, and I hand plenty of energy to spare when I got home. Haven't planned ahed for meals for tomorrow yet . . . That's never a good plan. Think I'll take out some hamburger, have my DH fire up the grill and slap some big ole burgers on, some sweet potato fries on the side . . .feel better now.

Oh, forgot to add:

Blueberries and full fat yogurt, just an experiment . . .we'll see how it goes. So far so good.

The country I grew up at beef tongue was a normal thing to eat. I have a whole smoked beef tongue in my fridge (from my ethnic store) and it's heavenly good. Basically you boil it for a long time with pretty much same stuff you put in broth. Slice it and use as deli meat. Watch out for my breakfast tomorrow, I am planning to open the pack. If you want I pm you exact recipe.

Blackberries are boiling with lemon. Whooaaa.
