Avalanche Posted March 9, 2013 Share Posted March 9, 2013 I've been familiar with this brand for a while, but just saw their prosciutto and pancetta for sale in my whole foods, and I was excited to see the pancetta is compliant (so is the prosciutto, but that as not as hard to find). I checked out their web site and they also make compliant bacon(!), as well as a bunch of other cured meats. Haven't tried their bacon yet, so I can't vouch for it, but I will order some soon.
