Betsy Mahaffey See
What am I doing wrong with coconut oil. Whenever I use it to stir fry or fry up some veggies or fry some chicken in the skillet, it smokes REALLY bad. I've reduced the heat, but still smokes up my kitchen. HELP! Moderators Tom Denham Posted March 26, 2013 Moderators Share Posted March 26, 2013 I've never had coconut oil smoke. What kind do you have?
GLC1968
You know, I used coconut oil for a stir-fry last night and I was kind of shocked at how quickly it smoked! I was using the refined version which indicates it's good for high heat, too. I'm fairly certain the last couple of times I cooked in my wok, I used either ghee or no oil (since I was starting with ground beef), so this was a first for me. Thanks for asking this. I'll be curious to see the responses.
Betsy Mahaffey See
It's Trader Joe's brand Coconut oil, but I've had other brands do this too. It doesn't smoke right away, but will before I'm finished cooking. My husband comes home each night and is thinking I'm burning dinner. faymao
How high is your heat? I cook with unrefined unbleached coconut oil and it's never smoked.
CraftyCarnivore
I use the organic, expeller pressed from whole foods. Never a problem and it browns unbelievably well.
