DAY 21:

breakfast: nuts, leftover lamb and turnip stew, sauteed veggies, sweet potato. now that's a breakfast!

lunch: salad with tuna

snack: apple with almond butter

dinner: chicken and veggie stirfry with pesto

post-workout: a few dates, macadamia nuts, coconut manna

weird eating day (dinner at midnight) but pretty successful selection of food.

DAY 22:

breakfast: 3 eggs, mushrooms, green pepper. grapefruit.

lunch: leftover lamb and turnip stew

snack: lara bar (happy to see there are sugar-free versions that have cocoa powder in them!)

dinner: sauteed chicken and veggies with pesto

generally quite happy with how i ate. when i'm home for the weekends my eating is quite solid.

DAY 23:

breakfast: ground pork and veggie hash; 2 eggs. this was pretty awesome and easy to do. i may post this recipe later. i see this being a staple in the future past whole 30.

snack: farmer's market! ate a bunch of random fruit and veggies. farmers markets are one of the best things about living in SoCal.

lunch: salad with grilled chicken

dinner: burger, guac, sweet potatoes, lettuce.

snack: cherries and nuts with melted coconut manna. fantastic.

a great eating day!

DAY 24:

breakfast: leftover ground pork and veggie hash; 2 eggs. still great!

lunch: salad with chicken, apricot.

snack: melon mix and nuts

dinner: coconut crusted chicken and salad. coconut crusted works much better than almond meal crusted.

snack: nuts and cherries and coconut manna.

happy with how i ate. the interesting thing was that something happened where i had good reason to celebrate but it was really hard to think of how to do that with food/drink under the whole30. oh well i'll live. ;)

DAY 25:

breakfast: leftover ground pork and veggie hash, 2 slices of frittata. nuts.

lunch: basil chicken salad, leftover sweet potatoes, apricot

dinner: roasted pork tenderloin, mixed veggies. super good will post recipe.

snack: banana, almond butter, coconut

DAY 26:

breakfast: leftover ground pork and veggie hash, 2 eggs, pluot.

lunch: leftover coconut chicken and salad

dinner: purewraps with chicken and veggies and homemade almond sauce (will post recipe, this was good!)

snack: almond butter, coconut, watermelon.

dinner was totally awesome. first time trying the purewraps.

DAY 27:

breakfast: frittata & sweet potato w/ coconut manna. apricot. coffee. nuts on the way to work.

lunch: leftover chicken and salad with almond sauce. super tasty. going to have to keep the almond sauce on tap.

snack: apple with almond butter.

dinner: salad with leftover pork and some more almond sauce. all gone!

snack: a few dates with almond butter, coconut, and a few macadamia nuts.to

too many nuts! well, i don't feel ill for eating them or anything, just want to try and keep things more balanced.

It's kind of like a coconut frosting made of just coconut. At room temp it's pretty crusty and hard but becomes a thick liquid when heated (or eaten and left to melt in your mouth). Very tasty. I like to put it on sweet potato leftovers and reheat in the microwave. Also good to heat on it's own and pour over fruit and nuts.

breakfast: leftoverpalooza. pork tenderloin, apples, carrots, and turnips, egg fritatta, sweet potatoes, 1/2 an avo, and some watermelon. good stuff!

lunch: leftover pesto chicken

snack: lara bar

dinner: chicken and veggie stir fry.

snack: a few dates with macadamia nuts and coconut

today is day 30! going to post a big writeup on my thoughts on this experience in a moment. :)

DAY 30!

breakfast: revenge of breakfastpalooza - pork tenderloin, apples, carrots, and turnips, egg fritatta, sweet potatoes, 1/2 an avo, and some watermelon.

lunch: leftover pesto chicken and veggies

dinner: roasted pork tenderloin, mixed veggies. made this again it's so good.

snack: coconut cream and melon and walnuts. coconut cream > coconut manna. good stuff.

basically, no plans to deviate significantly. breakfast for day 31 was still W30 compliant and lunch & dinner will be too. but it will be nice to not have to think about posting all of this every day. :)
