Thought I'd pop back in and start a post Whole30 log.

So, today...

Breakfast-Mexi eggs (I love these!). A banana and a bit of almond butter.

Lunch-this will be leftover spicy chicken thighs (recipe from Practical Paleo and I make it a lot-really easy and super tasty), some leftover roasted parsnips and a big mixed salad and half an avo.

Dinner-planning to make salmon fillet with roasted vegetables- peppers, red onion, courgette and sweet potato. Rest of the avo.

The chicken thighs are the recipe called savory baked chicken legs on pg 264-I use a thigh+leg combo and use the Cooling Spice blend on pg 232. We all love them here (unusual for us to get a dish that each family member likes!)

As I'm not currently doing a Whole 30, yesterday morning I had what would be counted as a SWYPO breakfast of eggs mixed with a banana and almond butter in a kind of a hash on the pan. Followed by a leisurely read of the paper. Lovely :).

We had fillet steak and loads of stirfry veg (with my trusty coconut aminos) for dinner and today was a roast chicken with roasted sweet potatoes + red onions and some steamed green beans and broccoli.

Fire lit and wind howling outside-where are you Spring??

Started the day with some Swirly Crustless Quiche (recipe from Practical Paleo). Plenty left for other breakfasts this week.

Lunch was leftover roast chicken and greek salad with avo-ziki dressing.

Dinner will be bolognese with zoodles and a side portion of steamed green beans. The bolognese recipe I'm trying uses some coconut milk in it-interested to see how everyone likes it. Apart from that it's a pretty standard recipe with carrot, onion, celery, garlic, bacon and tomato.

Well, the new bolognese recipe was a hit. Will be making it again.

Breakfast-swirly crustless quiche.

Lunch- will use some leftover bolognese to make stuffed peppers.

Dinner-will be making cumin spiced pork tenderloin with root vegetables. I'm not a big pork fan but I had some in the freezer and decided to give this a shot as the recipe sounds like it should be tasty.

It's this one from Practical Paleo-I didn't have spaghetti squash so didn't do any of that part of it-I just made the actual bolognese bit. I think the children preferred it to my usual recipe as the coconut milk mellowed the tomato a bit. I used half a tin of chopped tomatoes as I didn't have paste.

Had a break from the crustless quiche this morning and had 2 soft boiled eggs, some bacon and half an avo.

For lunch, I had some Italian style lamb (this recipe-I left the potatoes out http://www.valvonacr...eslambstew.html) along with sauteed spinach with pine nuts. I also had the 2nd half of the avo.

Dinner will be Melissa Joulwan's coconut chicken curry http://www.theclothesmakethegirl.com/2009/09/08/dinner-and-a-movieâ„¢-step-brothers-and-chicken-coconut-curry/ and a side of broccoli and asparagus.

Missed a few days of my log so just catching up...

Yesterday I made roast leg of lamb and ratatouille for dinner-it was really delicious. Just enough left to have with my lunch today.

For breakfast I had 2 soft boiled eggs with sauteed cherry tomatoes and half an avo.

Lunch will be leftover lamb and ratatouille.

Dinner-I'm going to try Melissa Joulwan's 'Country Captain Chicken' with some roasted sweet potato chunks and steamed green beans and broccoli.

Country Captain chicken was a success yesterday-will def make again!

Breakfast- 2 boiled eggs, a slice of parma ham and some sliced tomatoes with balsamic.

Lunch-smoked salmon salad and half an avo.

Dinner-an omlette (onions, red pepper, asparagus) and some sweet potato hash.
