JaneA
My kids have been real troopers about giving up their beloved carbs. I have made, in the past, sweet potato "pancakes". All it is is puréed sweet potato, spices and eggs. Then I fry it up in clarified butter. We can call them sweet potato patties. But I don't want to Paleo-ize junk food, which I know defeats the purpose of the Whole30. It's a yummy, easy and fun way for me to get the kids veggies for Meal 1. Am I breaking rules, here? Deborah Brommer
I am TOTALLY new here, so I may not know, but I would think of those as Sweet Potato Patties and not as pancakes. That is no different than a meat or fish or egg patty (burger).
Kirsteen
Personally I feel anything that gets kids to eat healthy food cannot be a bad thing As far as I can see you're only adding more protein to mashed sweet potato. What you're eating isn't junk food and you're not trying to recreate junk food with it; it sounds good to me.
KitchenWitchy
I have seen a variety of opinions on sweet potato pancakes. I eat them myself with no guilt whatsoever, and sometimes with a bit of almond butter if its going to be a long wait for lunchtime.
