Substitute for breading

I like using either coconut flour, almond meal, or some raw pecans I chop up. Sarah at Everyday Paleo has a recipe for crispy shrimp and she uses egg whites and coconut flakes. For a binder you can dredge it in egg, mayo, olive oil or other liquid before breading it.

I have also seen crushed chicharones (fried pork rinds) used.

I use coconut flour & almond flour usually. Though throwing in some coarsely chopped nuts (almond, walnut, pecan, whatever tickles your fancy) and maybe some shredded coconut can work well too, depending on flavour & texture you are aiming for.
