KJT
I was in a cafe last week and ordered a salad with coconut chicken. This turned out to be a chicken breast with some sort of coconut coating on it. I'm sure it had something non-compliant in it, but since I was between whole30s and on vacation, I figured a little off-roading was allowable, so I didn't ask. It was delicious! Now I want to make it at home. I'm not much of a cook and need detailed instructions to make everything. (Seriously, I have a recipe to boil eggs.) Does anyone know how I would go about making a compliant coconut coating for my chicken? I hardly ever cook chicken, just because I don't know what to do with it other than bake it, and this would give me a little variety in my diet. Kirsteen
I've never made coconut chicken but someone just posted this recipe for coconut shrimp - maybe you could adapt it http://fastpaleo.com/fried-coconut-shrimp/
CraftyCarnivore
Don't feel badly, I had to look up how to boil eggs as well. And I consider myself an experienced cook; I just hadn't boiled eggs in about 10 years.
