I took leftover Nomnom's chicken with gravy and turned it into a soup with a bunch of veggies, tomato paste, beef stock (its what I had) and poached eggs on top to increase the protein. It turned out really good.

I turn that chicken and gravy into a soup all the time. When I need extra protein (or want to be cheap by using eggs) I use the avgolemono method. Basically, I whisk and egg with lemon juice then temper with some of the broth before adding to the soup.

Maybe I will try to poach eggs tomorrow. I've been wanting to try and soup is on the menu for lunch.
