Chicken Fajita Nachos

I saw this idea on Pinterest and tweaked it for our purpose. SO good. All three of my boys loved it. It will be part of our regular meal rotation for sure!

Here's what you need:

1 bag of mini sweet peppers (red, yellow, orange)

Chicken mixture:

1-2 Tsp coconut oil (or whatev)

2 cloves garlic

1 bunch green onion white parts, sliced. (Separate the white and green parts)

1 1/2 cups (about 2 breasts) cooked and shredded chicken

1 tsp. chili powder

1 tsp. cumin

1 cup salsa (I used Trader Joe's Roasted Tomatillo and Yellow Chile salsa - SO good)

Salt and Pepper to taste

Garnish/Topping:

Sliced black olives

Cilantro

Diced Tomato

Green onion - sliced green parts

Heat the oil in a skillet and add the garlic and green onion. Once that's heated a bit add in the chicken, seasonings and salsa. Heat through.

Cut the peppers in half and remove seeds. Place on baking sheet. Place some of the chicken mixture on each pepper. Bake for about 10 minutes at 350. Remove from oven and add toppings.

I made some with local raw cheddar cheese for my boys and added that before baking.

Thank you for finding this and bringing it back to life!! I knew I had seen a recipe like this somewhere and have not been able to find it. In fact, I am replying just so I can find it again. :)
