I love roasting vegetables (with oil, salt, and pepper on a pan in a 450 degree oven) but I'm not sure what is best in terms of oils. I sometimes use coconut oil (on roasted cabbage, yum.) But sometimes I don't want that flavor. I've used olive oil, but I think that it's actually not good for me to heat olive oil to that high a temperature. Perhaps this is a good use for ghee? I actually have not yet experimented with ghee, but maybe it's time to make some... Link to comment Share on other sites More sharing options...
Kirsteen Posted May 4, 2013 Share Posted May 4, 2013 I've used ghee but I'm one of the very few that doesn't like the taste unless it has loads of garlic in it I've used coconut oil and duck fat and beef tallow and the fat that's come off the bones I've been using for bone broth either beef or chicken.
