The ingredients are: For the crust: 1 sweet potatoFor the filling: 1 onion2 cloves garlic2 tablespoons sun-dried tomatoes2 teaspoons sea saltground black pepper, to taste 1 tablespoon herbs de provence3 tablespoons coconut oil2 pounds cauliflower6 eggs1/4 cup filtered water Would a slice or two of this be considered enough to fill the vegetable quota for a meal? TryingOver Posted April 29, 2017 Share Posted April 29, 2017 If eggs are your only source of protein in a meal, you should have as many as you can hold in your hand without dropping (for most that is at least 3-4). Since this only had six eggs, I would probably add a little more protein. For vegetables, it depends on how big the slices are. You want about 2-3 cups.
