Cauliflower pie and....?

Hi all,

I found a recipe in real plans called cauliflower pie. The ingredients are:

For the crust: 
1 sweet potato
For the filling: 
1 onion
2 cloves garlic
2 tablespoons sun-dried tomatoes
2 teaspoons sea salt
ground black pepper, to taste 
1 tablespoon herbs de provence
3 tablespoons coconut oil
2 pounds cauliflower
6 eggs
1/4 cup filtered water

Would a slice or two of this be considered enough to fill the vegetable quota for a meal? Is it also the protein? I need to avoid raw veggies for the time being so this would seem to fit...

If eggs are your only source of protein in a meal, you should have as many as you can hold in your hand without dropping (for most that is at least 3-4). Since this only had six eggs, I would probably add a little more protein. For vegetables, it depends on how big the slices are. You want about 2-3 cups. You could measure how many cups of sweet potato and cauliflower you use and then divide by 2 to determine the number of servings.
