Easy Spinach and Butternut Squash Egg Scramble

Recently needed to up my carbs in the morning because at day 16 and I was still feeling weak during my work outs. I came up with this on a whim this morning and it was AWESOME!!! (left over butternut squash came to the rescue )

3 eggs scrambled and soft cooked

3/4 cup cooked spinach (I buy frozen, organic and it is so convenient)

Reheated leftover butternut squash slightly mashed with fork (approx 1/4 portion of what was once a whole medium size squash)

MIx all ingredients in a bowl, salt and pepper and enjoy!!!

The texture and the flavor was surprisingly satisfying.
