BMikah Posted October 10, 2015 Share Posted October 10, 2015 It's day 7 for me and I'm tired of regular eggs. I also have a lot of leftovers from all the meals I made this week. So I put it all together for a fritata and I'm sharing because it's actually really delicious! Ingredients: 1 tbl ghee 2 slices Walnut-Crusted Pork Tenderloin (from whole30 recipe book) 1 cu. Roasted Root Vegetables (also from the book; omit the curry sauce) 1 shallot or Tbl onion 3 eggs salt pepper fresh thyme or herb you like Dice the pork. Whisk eggs, salt, pepper, and thyme. Melt ghee in frying pan on med-high. Add pork and cook until it browned and starting to crisp. Add vegetables and cook until they are browned. Turn heat to medium and add shallot. Cook for 1-2 minutes then add egg mixture. Let cook slowly on medium or medium low and then flip when outer edges are cooked in about an inch.
