Need ideas for meal prep without oven, cooktop, microwave

We are going to be starting a kitchen remodel next week, so for about a month (optimistically), I will not have access to my cooktop, oven, microwave, etc. I will have an electric skillet, outdoor grill, crock pot, and fridge. I could easily manage this way for a week...but I'm worried that it's going to get tough to keep things interesting beyond that for my family. Any suggestions I could get for cooking would be appreciated!
