Day 9 - The Day of Soup

I feel much better today. Did my same morning routine of 3 eggs. Then while in class I decided I wanted soup for lunch. Luckily, I normally have two hours for lunch between my classes and I've been using that for making whatever I want for lunch.

Now...I don't have any soup at home and started thinking about what to mix with what and so on. Can I just jump forward and say this is delicious?! I've never cooked with sweet potato but I figured I would try it. I pureed some sweet potato and mixed it with some cauliflower mash that I had for dinner a few nights ago. Then I sautéed and threw in some onion, bell pepper, celery and sliced up a chicken and apple sausage link. Don't forget the spices! Garlic, parsley, salt, fresh ground pepper and most importantly...red curry powder! Delicious! However, I've realized I'm not the biggest fan of sweet potato (which...looking at many posts and recipes, is not the consensus for most people!) but I can spice it up.

Anyways, today is going well so far which makes me happy.
