One tip for butternut and other winter squash...it's much easier if you just cut it in half, scoop out the seeds and pulp, then place the two halves face down on a roasting pan or baking sheet and bake for about 45 minutes to an hour at about 375 degrees F. The flesh cuts away from the skin much easier! Also you can roast the seeds with ghee at about 250 degrees F, stirring every 15 minutes for an hour.
