Tonya Farley Wagner
What is the difference between non-hydrogenated coconut oil and organic virgin coconut oil?
bkbk
This is not a short answer to your question, but the Tropical Traditions website gives lots of detail: http://www.tropicaltraditions.com/what_is_virgin_coconut_oil.htm. For what it's worth, I had been using other virgin coconut oils (Spectrum, Artisana, whatever I found at Whole Foods) until very recently, when Tropical Traditions had a great deal on their oil... and I will never go back. The quality is actually noticeable to me. I use coconut oil frequently to roast vegetables, and it is so much easier to toss the oil with veggies without it clumping or turning solid in the process, which allows my spices to distribute better and provides for better, even cooking.
