thai almond sauce

This is pretty simple, but I tried making a substitute for peanut sauce with almond butter and it was fantastic. I loosely followed this recipe:

More specifically, this is what I did (some things are estimates but should get you in the ballpark):

1/2 cup chunky almond butter

~1/3 cup coconut milk

1 tablespoon water

1 tablespoon lime juice (3/4 of a lime)

1 tablespoon ginger, minced/shredded

1 clove garlic minced

salt to taste

Add all ingredients to a bowl and mix thoroughly.

Very tasty. Could add coconut aminos and other spicy spices; decided to up the ginger instead. This made about 4 servings. We served it with chicken cooked in lime juice and lettuce, basil, onions, and carrots inside purewraps along with a side of oven fried sweet potatoes. Great dinner! Very filling and very fresh tasting too.
