I know, I know Not a great idea with the smoke point. I just purchased a bottle of Avocado Oil and it is really tasty! But I have noticed that when I roast my veggies in it, they seem a bit drier. Has anyone else noticed this? And if so, do you have any suggestions to make the Avocado Oil work for roasting. I usually roast on ~400 degrees with salt and pepper.
