Avocado Oil Causing Drier Roasted Veggies?!

I love roasting veggies but have been using extra virgin olive oil for so long... I know, I know :) Not a great idea with the smoke point.

 

I just purchased a bottle of Avocado Oil and it is really tasty! But I have noticed that when I roast my veggies in it, they seem a bit drier. Has anyone else noticed this? And if so, do you have any suggestions to make the Avocado Oil work for roasting. I usually roast on ~400 degrees with salt and pepper.

 

I do also use coconut oil and some yummy homemade clarified butter, but like having options! Thanks.
