I'll spend the next couple days grocery shopping and hopefully pre-cooking some food. I have unpacking and laundry to handle to though. I have 2 young children who I homeschool so that's in there too. I'm excited though and dragging my husband along with me, and I hope I can drag my kids in at least most of the way without them realizing it. Here's my general plan for week 1's menu: Lemon and Artichoke Chicken, spinach, cauliflower rice Slow cooker short ribs, collards, roasted winter squash Chili, salad Meatballs, roasted tomatoes, spinach Cream of broccoli soup, salad Salmon, carrots Those are dinners. Lunch will be leftovers, salads, tuna salad, salmon cakes, etc. Breakfast will be some combo of eggs, sausage, fritatta, crustless quiche, sweet potato mash, omelets, or simply leftovers.
