Portion Charts? in It Starts with Food book

Hope someone can help me, I am going through the Master recipes in the book and they keep referring to the charts for portions on the recipes.

 

I can't seem to find any chart that tells me how much e.g. protein for each person in the recipe.  What am I missing?

The meal template is your friend. :)  The recommended protein serving is 1-2 palms per meal.  That means the length, width and thickness of your palm.
