Chia seed pudding?

Hi! This may have been asked somewhere or a recipe shared, I tried searching in the forms but it didn't yield any results so forgive me - 

 

Does anyone know how to make chia seed pudding? I have seen it all over Instagram from my Whole30 heroes, and I tried to make it last night but it is so milky today... What am I doing wrong? Any tips or step by step recipes I could follow?

Chia seed pudding is not in the spirit of a Whole30. The truth is, you'll find many recipes on the web labeled Whole30 but they really aren't. Pudding puts you in Paleo treat territory, which is against the Whole30 rules. http://whole30.com/whole30-program-rules/

Plus seeds, along with nuts, are to be limited as fat options. (Yes, seeds are a fat on a Whole30.)

Hmm. Thanks for that quick reply. That is good to know, actually. I have done several Whole30's and never really considered how something like that wasn't recommended. I just have seen so many people eating it, and it seemed fine because of the high omega-3s or whatever. But as you mention, it isn't a full meal of protein, veggies and fat. Would you say that it can be a part of a post-Whole30/Paleo lifestyle or is it not even helpful outside of the program?

You get to create how you want to eat in a post-Whole30 world: we don't give advice here on what to eat and not eat afterward: that's part of riding you own bike.

To help you decide, maybe a couple times a week you integrate chia seeds into your meals in compliant ways? Like mixed into a salad, thicken a gravy or soup, in place of breadcrumbs for meatballs or to "bread" fish or chicken. Then, depending on how you feel, you can choose whether/how much and in what way chia seeds are part of your life post-Whole30.
