idauria Posted September 11, 2012 Share Posted September 11, 2012 I made spaghetti squash along with our broiled fish for dinner last night. It's so easy but so good and I thought I'd share it. Previously in the day, I baked the squash whole in a baking dish at 350 for an hour. I let it cool on the counter until I was ready to make dinner. I cut the squash in half and scooped out the seeds. I heated up some garlic in olive oil in a saute pan and then added the squash along with salt, pepper, and an Italian dried herb blend. You can use whatever you have, fresh would be good too. It was so yummy, even my kids liked it! Oh and today for lunch I reheated the leftover squash in a pan and added leftover roast chicken along with a couple tablespoons of sliced almonds. Super yummy!
