I wanted to make a stir-fry but don't have coconut aminos (YET! going to order on Amazon) so had to do a different flavor combination. Lime-Tahini Fried Rice - 1/4 of a head of cauliflower (makes a surprising amount of 'rice') - riced with some difficulty (aka mess) with my immersion blender - sauteed in coconut oil for about 3-4 minutes - added garlic, scallions, some ginger and cumin - added leftover taco meat toward the end (minute 4/5) - cracked 2 eggs directly into the frying pan, let sit and cook for about a minute then stirred - took it out around min. 7 Added fresh lime juice (one whole lime) and about a tbsp tahini.
