I made this as well, and I think it does work well as a creamer but the coffee needs to be hot. I found if my coffee got too cool that little oil spots would form in it. I think that is because of the fat content of the coconut milk. When I made the recipe I used more pumpkin and less coconut milk, that cut down on the oil a little.
